I have mentored hundreds of electrical and computer engineering students in various universities. I always choose hardware or software practical ideas that may lead to finished prototypes (hopefully products). You may check my YouTube channel project playlist at that link.
To give you some examples of some of my projects, I mention a project I supervised in 2007 at Beirut Arab university. The idea of the project is to build a device that will be connected to the internet and can send and receive text and voice messages. The hardware includes AVR microcontroller and Wiznet chip controller. The video for this project at that link. At the same year I submitted the project to a contest organized by Circuit cellar magazine and Wiznet company and the project got distinctive excellence certificate. What a coincidence that after two years in 2009, Jan Koum introduced the same idea (WhatApp) but using mobile devices not dedicated hardware connected to the internet!
Another project idea I supervised in 2016 is measuring blood glucose level invasively without puncturing the skin. The video for this project is at link1 and link2 And may more. many work and life responsibilities lead to procrastination which delays (or stops) the projects progress. But hopefully someday the important ideas will come to life. Finished PCB Photo Galley link1 - link2Projects Video Gallary links
